此族群不銹鋼,因為合金結構為奧斯田組織,又被稱為奧斯田不銹鋼。無法進行熱處理使其硬化,但可以藉由冷作加工提升強度與硬度。基本類型中含有18%鉻與8%鎳,所以稱其18-8不銹鋼。含有豐富的鉻與鎳,因此有較佳的耐腐蝕性,又俗稱鎳鉻合金鋼。300系列不銹鋼具備有優良的加工性,耐蝕性,與合適的強度與硬度,因此是最為廣泛使用的不銹鋼。
